2....... 28 oz or 32 oz cans whole tomatoes in juice

1....... large onion

2....... teaspoons chopped garlic

1....... teaspoon chopped jalapeno

2....... teaspoons finely chopped ginger

3....... tablespoons OO

1/2..... teaspoon ground cumin

2-1/4... cups (18 ounces) chicken stock

1....... tablespoon sugar

2....... teaspoons salt

drain one can tomatoes

combine drained and undrained tomato can contents

puree

cook onion, garlic, chile and ginger in oil for 8 minutes

add cumin and cook one minute

add tomatoes, broth, sugar and salt.

simmer uncovered 20 minutes.

blend again

sieve

adjust seasonings

reheat if necessary
