On May 26, 2002, Marty exclaimed about "Roger's Great Cakes."
While such a statement could have many meanings, she was in fact
talking about the pancakes made according to the following recipe.

Ingredients:

• 1/2 C GF pancake mix *
• 1/4 C blue corn meal, fine grind
• 1/2 tsp baking powder
• 1/4 tsp salt
• 1/2 C milk or half and half
• 1 egg
• 1 tbsp melted butter

*Pamela's and Arrowhead have been tested.

Method:

Combine the dry ingredients in a suitable bowl.
Stir in the milk, egg and melted butter, taking care not to overwork the mix.

Spoon into 3-inch circles on a medium-hot griddle.
Turn after bubbles subside.
