The dough:

Ingredients:

2 Cups - Hagman's "Featherlight Rice Flour Mix" (see below)
1 Tablespoon xanthan gum
1 package instant yeast
1/2 teaspoon salt
1 powderded vitamin C (yeast enhancer)

2 Tablespoons veggie oil
2 Cups water (approximately; probably a bit less)

HowTo:

mix and sift dry ingredients
mix wet ingredients
combine wet and dry with fork
roll mixed dough in plastic wrap
let rise for about an hour

turn oven to 450

prepare baking sheet with medium corn meal

lay out heatproof baking sheet for rolling
place dough on baking sheet
place plastic wrap on top of dough
roll out to desired thickness
peel off top plastic

turn dough and baking sheet, dough-side down, onto the baking sheet

shape dough edges

pre-bake dough for 10 - 15 minutes

pull from oven

add sauce and topings

return to oven

bake for 15 - 18 minutes

pull

let rest for 5 - 10 minutes (if that's your preference)

divide into pieces, serve and eat with wine, beer or cider


* Hagman's "Featherlight Rice Flour Mix" for three cups:

  1 Cup white rice flour
  1 Cup cornstarch
  1 Cup tapioca flour
  3 teaspoons potato flour
